I got this recipe from the Everyday Paleo Family Cookbook.  You could really use anything you want in it.  I made the recipe as is and it turned out great.  I will experiment with different veggie next time.



2 TBSP coconut oil
1 cup grated sweet potato
1 cup grated zucchini (squeeze out excess moisture after grating)
2 TBSP minced Italian parsley (I used dried – it was all I had)
1 cup diced ham
12 eggs, whisked

Preheat oven to 350
In a large over proof skillet, heat the coconut oil over medium to medium-high
Add the sweet potato and cook until they are soft and starting to brown
Add the diced ham and cook another 3-4 minutes
Add the zucchini and saute just until shreds start to soften
Add parsley and mix well
Spread the veggie and ham mixture evenly over the bottom of the skillet and pour the whisked eggs evenly over the top
Cook on Medium-low heat for 3-4 minutes or until you see the edges starting to cook
Put the entire pan in the preheated oven and cook for another 10-15 minutes or until frittata is firm in the middle
Slice like a pizza and serve
