Ok folks first things first, I can make these with my eyes closed so that means they are EASY to make! Probably as easy as it gets too.
1 cup almond meal/almond flour
1 teaspoon vanilla extract
2 shakes of cinnamon
Mix the eggs and almond flour in a bowl until smooth, then add the vanilla and cinnamon and mix some more.
Pour some batter into a pan that is on ~5 or medium heat, flip when the bubbles form and cook the other side for about 2-3 minutes.
Drizzle with honey or pure maple syrup, or just eat em plain… they’re that good!!!
Makes 3 medium size (6″ diameter) pancakes.
Tips: Don’t add frozen fruit to the batter, it will only make the pancakes much much harder to cook and they will break apart. Add the fruit on the side after they are done.
