2 Harboiled Eggs and Leftover Paleo Pancakes
Steak Salad, Bowl of Strawberries and Blueberries and Jesse’s Soup
Jesse let me try some of the soup he made for dinner last night – yummy!!! I will be making this soon.
Here is his recipe:
Chorizo Sausage (5 or 6 links)
4 cups Organic low sodium Chicken Broth
Half Chopped Onion
3 Lrg Chopped Organic Celery stalks
1/3 of a 9oz Bag of Spinach
Cut sausage out of casing and tear into pieces. Brown sausage in medium saucepan, drain fat and oil. Add sausage to broth, oregano, onion, and celery – bring to a boil. Once boiling, lower heat to simmer and cover for 10 min or until veggies are tender, stirring a couple times. Stir in spinach and simmer 1 to 2 additional minutes continually stirring.

I was going to try to follow a recipe for chicken lettuce wraps that I found online but after the 1.5 hours drive home in the rain, I just grilled some chicken, added some veggies and put the whole thing in a lettuce leaf. It would have been better with some type of sauce but it was still tasty.
